I honestly don't know what this thread is about. Sure, if you eat breakfast at a local place the egg might not quite meet your expectations as it's done the way people probably like it at those places. They don't get to get fussy over an egg that costs only 500 Riel extra. You can't exactly order them any particular way as they just have a big pile of earlier fried eggs, chopped up omelette, those green hard boiled egg things etc.
Some local businesses target foreigner customers by offering food that sounds familiar - and they might even have attractive pictures on their menu. Unfortunately the new chef might not understand all the strange nuances. This is why you may find yourself ordering a Greek salad and a dry garden salad containing cubes of cheddar turning up, or asking for a dressing another time and getting offered ketchup.
A fried egg is just that until someone learns how to do "sunny side up", "over easy", etc.
The trick is to go to places where they understand the difference, although it may cost a little more for that extra bit of attention.
