Can you distinguish Asians by country?
Someone else said something about Japanese always looking happy, and Koreans always looking disturbed. I would say the Chinese would be indifferent.
Stereotypes aside, how good are you at pegging their countries of origin, or do you take cues from their language speaking?
I feel I can distinguish it somewhat, and a lot more than before I ever left the west, when all asians were just that. haha.

Most of the time and not just Asians. I guess having worked in the hotel industry for a long time helps. Obviously, there are always exceptions, especially when it comes to facial features, but it is like birding: it is the overall "jizz". And before all the dirty minds chime in:

I didn't read that yet, but was thinking its the whole package isn't it. Their clothing, posture and behavior, then their hair styles and facial appearance. Skin color also plays a part as does their teeth. For example Japanese right now are getting corrective dental work for imperfect teeth as they think that is more attractive. I think overall Philippines are pretty easy. Chinese do stand out more. What groupings are the most similar do you figure? I find the poster ignorant of racial diversity since the Manchu and Tibetan people are missing, as are the Mongols. And there is also enormous difference (at least in mindset) between the chubbier and taller North Chinese ans South Chinese.
Secondly, i miss the cranial measurements for each race and the metrics to identify them from measurements.
I think the Jew was quite nicely rendered, though, not at all like what would come a few decades later in France and Germany.
Anyhow, the Dahon guide to racial profiling of Asian races:
Japanese: Slim, tall, triangular face shape. Disciplined, spends a lot of money. Often wears a moustache. Usually plastered to the phone. Takes pictures of everyhing. Does not care about price, only stay and eat at 5 star establishments.
Korean: Similar to Japanese but shorter, does not wear facial hair.
Chinese Han: Chubbier than J or K, talks louder. If female then a zombie apathy facial expression and eyes centered on the 6 inch plus phone. Always wears glasses. If northern Han then usually a bit rough/rude
Thai: Extremely vain and refined. Males are very feminine. Very slim build. Girls feature an inch thick layer of makeup so skin is chalk white. The ones You meet abroad belong to the upper classes and have refined manners and usually impeccable English.
Cambodian. Similar to Thai but dark skin.
Malays: Dark skin, like Indians. Usually wear a white hat since if then can afford travel they will make a pilgimage first.
Phillipino: Similar looks to Malays but wears a moustache. Their hot latin blood pumps constantly and their appearance and speak is more like an American, the people they admire above anything but the Lord.
Aussie: Always 6 foot plus. Always 100kg plus from working out 24/7. Drinks 10 beer or more per day. Always wears a vest. Speaks loudly.
Kiwi: Very rare species. Basically similar to an Englisman
English: Nowadays the native Englishman is extinct, all samples You encounter in Asia are imported. Basically look and behave like an Englishman.

I can see at least three Mongol tribes in the poster. The Tungusic people are also there, whom those you refer to as the "Manchus" are a sub-set of (and also somehow related to the Nanai through the Jurchen - the 'Manchu' were a conglomeration). I don't know why but the Filipinos are the most annoying. As soon as they open their mouths.
Being in Toronto you really see them all on a daily basis and I've always been able to fairly guess where most people are from and always ask if I'm speaking to them.
Otherwise for me the more far eastern the hotter. Yummy
