There are various systems used by bars. Some (including all of ours) use the system you describe above. Some bars have a longer piece of paper that they add each extra drink to manually, and then this is sent for totalling by the cashier at the end. It still involves paper going to and fro between customer and cashier.
Some bars have computer-based POS systems. One type generates a bill that is then exchanged for a revised bill when you order more drinks. This still involves bits of paper moving around the bar.
Another type just keeps a record of all the spending and then the customer gets a final bill presented to him at the end. This is the least liable system for paper going missing but it’s harder for the customer to keep an eye on his ongoing spending.

Come on, you have to admit that that's a retarded system. Plenty of places put the receipt in front of you, and as YoungWill mentions above, either replace it when more drinks are ordered or mark it up manually. Placing one slip at a time every time some drunken guy orders a beer in a girlie bar, and then semi-regularly monitoring CCTV footage to see if he crumples up a piece and throws it away is just silly. The staff have to watch their customer’s basket - if there is a discrepancy or he manages to sneak out without paying, the staff have to make up the amount from their money. Or so we threaten - we rarely enforce this, being soft hearted barangs, but it is common policy in Khmer owned girly bars.
A longer bill that is updated for each round of drinks would avoid some of these problems, but it’s much harder to keep an updated copy of the bill. With individual bills, every bill has a pink copy for us to check later.

Plenty of bars here use what Youngwill uses. The chit system is very effective, never seen any argument when it comes to payment, also helps you to keep count on your tab where you just simply add up all the receipts from your cup. Hard to cheat. Each cup is labeled with a number, the cashier also has a copy of the receipt and assign that number to their computer. I take that over the hand written receipt any day, I got screwed a few times at beer garden and karaoke on this
