And “corkage” really does just sound like a snobby way to say “bring your own bottle”.

I don't think so, corkage is for people who generally like a specific wine. I don't know of a restaurant in town stocking Alto Cabernet Sauvignon, Bon Terroir Cabernet Sauvignon, Kanonkop Cabernet Sauvignon, or just Nederburg Baronne, but I would happily pay corkage to drink that, knowing that it's an excellent bottle of wine, and that it has been looked after properly, not sweated in some container.Wayward Woods wrote:And “corkage” really does just sound like a snobby way to say “bring your own bottle”.
Shite transport/storage and clueless owners can make even very good bottles of wine turn into crap, and even if they do label themselves as a 'boutique' restaurant, they may still have no clue. I think it's about people wanting guaranteed consistency and a special relationship.
I take my own bottle out maybe two or three times a year, after friends do trips back home.Big savings, guaranteed availability.

I used to pay $2 at La Marmite back when they had tables on the pavement, fondly recall cockroaches crawling up a bottle of juicy $10 Cotes de Castillon. Ditto at the original La Croisette when the then reliable Ch. Moulin de Belair was still about $8. I just asked Rosewood, and they told me $70 per bottle. That seems extortionate, no?
When it first opened the hole in the wall Bistrot de Paris on Pasteur was charging $5. And they never charged me at La Bella Morte. Their own wine in both places was undrinkable.
More recently at a bistrot that does a good steak I was quoted $20 to open a St Emilion gc a friend had brought from Europe, but we knew how to react and he quickly went to $10. In fairness I could see his point, considering the attitude of the competition. At one place that does decent Beef Wellington I leave $2 on the table to cover the use of the glasses. Irina never charged me but the new regime asked me for $5 for a Pomerol I enjoyed with their delicious lamb casserole and baby potatoes.
A friend who brought Champagne to a birthday party at Darlin Darlin was charged a whopping $50 a bottle, but it's a clip joint after all. Another brought his wife - I don't know if or what they charged him. I haven't been to Rosewood but from its website it's a clip joint too.
Bottom line is that it's a favour if they let you BYOB. I would always prefer to discuss it with the owner in advance. Otherwise $50 and similar fixed charges are just fuck off prices: they would really rather sell you their own.
If they do sell you something a few years old from their list there's a fair chance that it is impaired to some degree. Send it back. Try doing that with BYOB. That's the key reason their charge should be modest. So best with anything risky to decant before you take it to the resto.

Do these high end places have red wine not chilled or warm?
In the UK you can get away with house wines, if you’re not too fussy.

Speaking of marking up of wines, I saw the Phnom Penh Sailing Club (Bassac lane) charging $5 a glass for what is a $6 bottle. Now that’s a mark up.
