The more I learn about teaching in Cambodia, the more I get the impression that there are very few teachers who have what could be called a full-time job, and that most seem to work random hours in one place, supplemented by random hours in others?
Is that the case, or am I missing the point?

It's often the way to get started. Once you prove yourself, it's likely you'll get enough hours at one place to cease being peripatetic. I don't know what the proportions are, but I think it's very unlikely that what you say about full-time hours applies to 'very few' teachers.
