Yes, I did realise exactly where you were coming from and the reading you'd already done. I just went ahead anyway! I read that How to cook perfect battered fish article recently and thought it was a good one.
I love fish and chips but I've never eaten it in Cambodia because I expect to be disappointed. Bit daft really; I'm still sceptical about Fish restaurant's fish and chips but I'd actually expect Green Vespa's to be good - and the one at the Lake looked good too. Shame it's not around anymore. I'll definitely give yours a go.
I agree with the others though: it's odd to mention brown sauce in a fish and chips thread. But my opinion about brown sauce is that it's not something you home-make, you just buy...
