I never run a tab in bars, it prevents all kinds of potential shenanigans and hassles. I order a drink, or drinks at the bar, and pay immediately. Haha, last time I left Cambodia for Europe I was quite surprised to have payment demanded each time I ordered a drink. Found it unsettling.
I will pay as I go in particularly crowded bars, or particularly poorly managed ones. Otherwise I just run the tab, as I generally have it correct in my head to the nearest dollar.

Most places run tabs for the night as a matter of practice, but I don't know of any in Cambodia that insist on it and would refuse your business or ask you to leave if you keep paying after every drink. I'm pretty far removed from the type of person who has one drink a night. Fair enough. It's just a bill. Next time I will offer to pay it each time and see what happens. I find it strange when I pay as I drink I tend to spend less than paying all together at the end.

Anyone been into that recently opened bar on 172 with the mischievous name of The Play Penh. I havn't been around for a few weeks but after it opened whilst regularly having lunch and a couple of afternoon beers at the B Dolphin across the road, I couldn't help but notice their lack of customers, and why they would open so early, 1.00 - 2.00pm, for what seems like a night time establishment. I don't venture that far down that street at night so maybe they do okay with night trade.
It must owe the owner a few dollars as a friend, who is also friends with the owner, told me me he originally paid 15 large for the old Night Moves bar and he seemed to spend quite a bit on renovations.
