I was also very doubtful about such claims until I experienced it firsthand. That was about 5 years ago at the pirate’s near dolphins where I was a regular. I was well rested and previously had dinner with 2 glasses of wine followed by two vodkas mixers which as you know couldn’t have much impaired my senses since my early drinking days, now 30 years ago.
As I was drinking my very first drink over there, I left my glass briefly unattended on the bar to say hello to a girlfriend. Shortly afterward as I just finished that drink I knew I wasn’t in my right state and immediately left driving my car, as I could foresee my falling down.
That drive home was as bad as if I had just snorted some K but I still managed to reach home, stumbled a bit in the stairwell, before collapsing for about 18 hours on my bed, fully dressed with shoes on, eventually awaking with a non surprising monstrous headache.
No one ever saw a thing but I always thought it must have been some mistake involving glass swapping as it wasn’t hard for any perpetrator to figure out that plenty of people would come to my help if seen being escorted out by strangers like a zombie, especially as it was still very early in the night.

yeah tbh i was only semi joking,
but as you, and many others have (convincingly) said, you knew at the time you were under the influence of something other than alcohol
people who get blackout drunk and blame it on drugs though, when its just the effects of too much sudden alcohol in the blood stream,
tbf i am going more off experiences in England where Binge Drinking is almost a part of our "culture" and far more common, people who have one too many shots, which cause the sudden alcohol to the brain leading to blackout drunk symptoms (en bloc or fragmentary),
people who often were having a steady night, then have some shots, to which most don't even remember taking, then waking up not remembering much, is not uncommon and just down to the alcohol,
people who have a few drinks, then black out, but proceed to carry on having a full nights drinking racking up $140 in bar bills, managing to go home and have a shower etc then blame it on being spiked...? not so convincing
ps. it was our 2nd or 3rd meet i think, and i member it well
