For Ho Chi Minh, Vien Dong hotel is pretty good for the price range and location. How about the war remnant museum, one of the tours on a back of a moto, evening food tours tend to ply you with plenty of drink. Sample some of the craft beer bars such as Heart of Darkness, Pasteur or East West. Spend an evening people watching on Bui Vien, cu Chi tunnels by river boat.
Hue, (I personally prefer Hoi An for the center) but a river cruise is good visiting the tombs. Visit DMZ? Bach Ma National Park. A sundowner on the top of Imperial hotel gives great views.

I get tired of Saigon pretty quickly, too crowded and dirty. Don't take those motos, the Mai Linh taxis are clean and cheap.
I would select Hoi An over Hue too, though Hue is pretty interesting. Everybody loves Hoi An.
