As Sihanoukeville is obviously no longer an option to consider, I'm thinking of Christmasing in Thailand this year, probably Koh Chang.
It's been years since I attempted it, so would like to know if anyone has crossed with their car into Thailand at the Koh Kong border recently and if so how easy it was.
Or even the other border farther north near Pallin.

Going the other way back into Cambodia you might have more problems in Koh Kong but can not speak from experience of crossing with car

Pailin should be OK but not many people or cars go through that border. Crossing with a Thai car through Hat Lek/Koh Kong is easy, as is crossing into Thailand with a Cambodian car. In theory, you're not supposed to drive further than the province you entered (meaning Koh Chang would be perfectly fine as it's still in Trat) in practice, Thai officials are lenient towards Cambodian vehicles. The only other border I would recommend is O'Smach/Chong Chom but that's quite a detour.

Crossing the border is surprisingly easy and convenient. Immigration office and hand them your passport. Wait a few minutes and you'll be stamped out of the Kingdom.

Leaving to Thailand through the Hat Lek/Koh Kong border is a breeze. The whole process takes around 30 minutes or less. Coming the other way isn't such a pleasure as the border guards have an annoying habit of trying to squeeze more money out of you. The Tourist Visa is US$30 but they always first quote the fee in Thai Baht and at a rate which equals more like US$50. My advice is to keep your cool, stay firm on the US$30 and after a short while they will grudgingly accept your US currency. Make sure to take a couple of passport sized photos too otherwise you will be charged for not having them. Oh and one last note is to ignore the "medical tent" on the left as you go up to get your visa. It's just a blatant scam.

Is an international drivers permit required? I've crossed twice previously. Once to Koh Chang (2016), and once up to Chiang Mai (2017). Chiang Mai was for 2 months, and they were quite shocked when we went to renew some paperwork and we were outside of Trat. I'm planning a trip back to Koh Chang, and just want to make sure we have what we need so we don't get turned away.

Can only take the car for one month (there’s a per day fee for overstays, but you must sign a form guaranteeing the full price of the car and taxes if you overstay - don’t cross with Barang doa sloe or you could find yourself liable for a lot of money). Easy to buy the insurance in the window at the boarding (clear out of Cambodia, walk across to do all the car paperwork, then walk back and drive the car across). There’s a guy there that will help with all translations you can tip out.

Would it be possible to take a car that you don’t own - ie, registered to work or a family member? Could they sign and authorize something?

drove last August between Kep and Hat lek.
the road had so many pot holes it limited me to under 30kms/hour, 15 kms/hr for some streches...between the borders it was more of the same..
Once in Thailand smooth driving all the time!!
