Chablis is easy enough to find anywhere, as I'm sure you know. I'd probably buy it from the Warehouse.
Snails you'll find canned, and I think that at least Bayon has them, but Mü might as well, which has an excellent cheese selection at reasonable prices.

I love Mü. Recently though their meat and cheese selection has decreased substantially. I'm hoping it's just because stocks are low and they're waiting for more products to show up and not because there's no market for it. Last time I was there they had very few cheeses and meats and instead, the display cases were filled with prepackaged President and Emborg cheeses. A bit disappointing.

Also, some might have noticed that Lucky stopped stocking the fresh cheese in their deli area. I found that this is because they have moved it over to their Lucky Gourmet (or whatever it's called) in Exchange Square. It was always pretty pricey, until it was starting to get old and they'd put it up for 50% off. Based on how busy I think that new store is, I'd wager they'll be having some aged cheese up for sale soon.
