I'm bored, pissed and hungry, so rustled up a few things from the garden and the old lady who sells veg over new year, the results are good, so thought I'd share.
Pedro's mango coconut curry:
1kg chicken (I killed a 2.5kg cock yesterday for the monks, kept 1/2)
2 onions
Some mangoes
Shit ton of garlic
500ml coconut milk (used old coconuts from the tree, tinned easier)
few spoons of turmeric
Few spoons of curry powder
Few spoons of garam masala
A load of fresh ginger
Little bit of vinegar
Chillies
Fresh coriander
1. Put 1 onion, some coriander, chillies and a shit ton of garlic in a blender with some water. Whizz the crap out of it.
2.heat some oil,or probably better ghee (which is freebasing butter) in large pan.
3. add the whizzed stuff and put in garam masala, turmeric and curry powder. Heat slowly, turning it until a thick paste is formed. Put paste aside.
4. mash up.a chicken into a few bits, fry with diced onion and a shit ton more garlic. Once browned chuck in a bit of water and stir in curry paste. Throw in a bit of vinegar.
5. throw in some peeled mangoes. Simmer for a bit, at least an hour to let the chicken come away from the bone and the bone to get the marrow out.
6. chuck in the coconut milk and cook.the fucker longer. Test it and throw in salt, pepper or anything else for taste.
7. garnish with coriander and eat the cunt with rice.
For best results, allow to cool, strip the bones of any meat still on and throw them to a dog. Remove mango stones and reheat.

Nice idea! I like experimenting with cooking, too. I haven't yet organised what I've made into recipes, but I'll try and do so before long. Right now, I'm obsessed with Kampot Pepper, which I consider to be the best in the world (my own opinion, obviously), so it goes on everything.

My missus cooks a lot with Mangoes. And tomorrow I'll make about 10 liters of mango chutney which the whole family likes.

The girlfriend puts that sticky tamarind in curries for sour. $2 a kg, for a bag of sticky mess. I've been informed it's also good for constipation and when mixed with water it tastes just like prune juice!

Something like this, in Africa I used peaches and apricots
Ingredients Edit
750 g dried mangoes
3 litres brown wine vinegar
2½ kg sugar
500 g onions
12 g salt
7 g cayenne pepper
Directions Edit
Soak the dried fruit in 2 litres of the vinegar overnight, then cook all until soft,.
Remove fruit and mince or food process the fruit.
Place left over soaking and the further 1 litre of vinegar and fruit in a pot.
Add sugar and grated onions and spices.
Add more vinegar if too thick (it should not be too runny or too thick).
Cook for 1 – 2 hours, stirring occasionally to prevent it 'catching' on the bottom.
Pour into sterilised jars and seal.

2-3 red chilies, finely chopped
2-3 cloves of garlic, minced
500 ml white vinegar
400g sugar
2 tsp salt
2 tsp nigella seeds (never seen them in a market, get them from an Indian restaurant)
1tsp each coriander seeds, yellow mustard seeds, cumin seeds.
Dissolve sugar in vinegar, bring to a boil and reduce a little.
Dry roast coriander, mustard, cumin seeds until fragrant.
Add everything except chillies to vinegar and simmer for about an hour until thick.
Add chilli and fill in jars.
Best to keep for a little while before using. I usually make a larger quantity than that and keep in the freezer.
I do not like raisins in my chutney but it is an option.
