My favourite is the VIP Mart, there's one on Soterous opposite PP Center and another on 51 south of Gloria Jeans. Not the cheapest at $3.50, but good stock and great meat.

For me it depends on whether you want pho or a western palatable pho. The best pho I've had in town is from the Pho24 down near the Phnom Penh centre; they've got a fantastic chicken breast pho which is all meat, no bones, no fatty bits, no spare pieces of foot or sinews, etc.

However, for something a bit more authentic (i.e. with crunchy/chewy bits that leave the brain asking ... what frickin piece of the animal was that?!), the pho at Magnolia on Pasteur isn't bad, and Ngon for all its faults is passable also.

Review of Magnolia forthcoming. I've yet to have a really good bowl here.

Lucky Pho by the FCC in Riverside: $2.50.
Pho24 is pretty good (by Metahouse) but $3.50.

Yeah, I'd like to find out some more places too....

There's a nice little place opposite Magnolia on st. 51, can't remember what it's called. Pretty good beef Pho for $2.50.

The little noodle shop's version of Pho on st 172 wasn't too bad. Freshly made noodles. There is also Maxim Saigon on st 130.

Look forward to checking out 294/63.

For me a good Pho needs a heavy rich, slightly oily stock that tastes like it's been days in the making -- NOT like instant noodle mix --, it should make you want to drink it even after you've finished the noodles. Ideally it should have beef meatballs, sliced beef, fatty stringy beef brisket and a few pieces of fat and cartilage for good measure. The rice noodles and side herbs are a no brainer.

IMHO A good Pho will always cost more than $2.50 because to do the stock properly and the correct meat it would be impossible to sell it any cheaper.

I also find Pho in Saigon a mixed bag these days, found Pho24 special pho to be good (not a fan in PP, below par stock). Not so keen on Pho 2000. Found most of the family owned joints aren't as good as they were, food prices have gone up sharply in recent years yet most of the local joints are still trying to serve up <25,000d bowls, something has to give and unfortunately it seems to be the quality.

Agree with all. It's not authentic Hanoi style but I prefer the better pho in Little Saigon in California to most. In Saigon I eat at Pho Thanh Canh, wonderful brisket and pretty good broth.
