I ran a successful bar for 9 years in Phnom Penh.....I really understand the business model. During those 9 years, I spent an average of 10 hours a day in the bar. If you take what I made....and consider all of my up front capital expense......it was a demanding, low wage job.
I am not bitching about it....I was very happy to do it. But your idea that there is just extra money floating around that I could portion out to the staff is wrong.
When you drink at a bar, all you see is the menu price vs. the wholesale price....and you imagine the wild profits the bar owner is raking in. But, if you walked in those shoes for a bit....your outlook would completely change. First off, you get to spend 20-30k and hope someone shows up, then you get to work a hundred hours a week for min. wage....and buy the new air con, new TV, fix something that breaks every day...etc. etc.
Now, when I am in a bar...I don't see the bar owner as profiting from me.....I see a guy that is working for cheap to get me into his bar so that he can scratch out a profit.
It really is an eye opener when you are the guy opening his wallet every day....and paying himself last.
