cattle bred for beef in the us are literally pumped full of growth hormones, thank god the cambodians can't afford them for their cattle

That's what I've been doing for ages, but I like my burgers lean and I think the average burger eater wants a proper mixture of fat. I'm assuming chefs know how to choose the proper cuts for ground beef so it's not rocket science either. I'm surprised JM buys from lucky for his bar. None of the restaurant owners I know buy meats, fruits or vegetables from lucky. I took it as he buys from a variety of shops as he doesn't explicitly say that he never buys from Lucky. Otherwise why would he mention the price if it's cheaper than at Dan's or Open Wine? Meat is meat and for ground beef I doubt there is a difference between Dan's or Lucky's. Where it makes a difference is the homemade coldcuts which are better at Dan's, but cost twice as much.Chuangt2u wrote:Huh? It's a meat/butcher shop outside of PP which supplies a few restaurants. Sometimes they'll advertise "BBQ from Smokey da Boar meats". I think they make sausages too. I use smokey dah boar in 2 restaurants atm, they have 2 types of ground beef, standard & lean and I've never had a problem with them. Their sausages are great and have a decent selection. It's a kiwi guy and his Vietnamese wife running the show at a farm just outta town. The wife goes to Vietnam every couple of weeks and picks up anything I need - frozen tail on deveined tiger prawns (26/30) as well as loads of other stuff.
Hamburger mince - $5.8
lean beef mince - $7.5
lean pork mince - $7.0
prime smoked back bacon - $8.0
26/30 deveined tail on tiger prawns - $14.0
for all my steaks, some small goods and cheese I use AusKhmer (living room cafe/food pantry). AusKhmer is really only beneficial if your a Buisness or have strong buying power as all their stock is imported but of decent quality.
Dan meats and open wine buy meat from AusKhmer.
Dan meats has great pork fillet, the sausages are better at smokey tho.
Open wine has the best quality bread I've tried - woodfired sour doughs etc. (sorry off topic but it's really good bread)

In my earlier post I was just joshning with jm.
The burgers are great at the Garage. The patties are lean meat and plenty of it.
However compared to some of the local fare the cost is not cheap. Compared to the price I pay for a burger in OZ, it is not cheap either. However if I want a quality burger from the Garage it is the price I have to pay, and I have paid it quite a few times.
What this topic highlights is that in reality providing good quality western standard food in Cambodia is not cheap. Add to that the fact that many people expect such food to be relatively cheap in Cambodia and you have a problem of squeezed margins. $3 may seem like a lot for a burger but you have to sell a hell of a lot of them to make a half way decent profit. The gross profit on the burger is lucky to be much more than $1.30
Many people expect Western standards but want to pay Cambodian prices. You can charge Westerrn prices and make a decent profit on an item but you will sell so few items you will go broke if food is you main income stream (which it is not for the Garage). So you charge reduced prices and end up working hard for very little.
Little wonder no one has taken up barforsalecambodia's offer of renting the restaurant facilities in his bar, when on a burger of this price you would also be paying a rent of 60 cents.
