I'm not a crab expert, but for lobsters it depends on where they are on their cycle of molting. I believe that younger lobsters and crabs molt multiple times a year, but as they get older the molting becomes less frequent, oftentimes once annually. When the shell is hard, it is more full of meat. The softer it is, the less meat that it has, and it will be more full of water to keep the new exoskeleton large enough to fit it once the meaty body grows. The natural tendency is then to desire a hard shell lobster/crab, as they will be the meatiest. However, I find a soft shell lobster, several months after molting, the best, as the meat is way sweeter. I'm not sure how much the flavor of the meat changes for crabs (other than the obvious 'soft shell crab' that you eat whole, but I mean in the variations of shell in a 'hard shell' crab). Also, as many of us here know, the Cambodians prefer female crabs, hoping that they will be full of roe, but Westerners will typically like males that will be meatier. While you're negotiating you can mention that you'll take males and therefor be able to get a slightly better price, I believe. I doubt that the crab we're buying, at their age/size, molt monthly, in sync with the moon phase. There are also multiple factors that will determine how fast the new exoskeleton grows, including water temperature, and the nutrients they're able to consume, including if they eat their old shell or not.LTO wrote:I have no idea how much more or less the meat weighs. Technically, yes. However, in a female crab (called a 'sook'), the roe is the ovaries containing the eggs, whereas in a male crab (a 'jimmy') the roe is the sperm, and you'll be hard to notice it. The bright red roe that is actually flavorful is solely found in females. It should also be noted, before someone jumps on it, that the roe you find inside the female is the unfertilized egg, and both crab and lobsters carry fertilized eggs externally (in a lobster you can just look at the tail to see if it turns in, or flares out, also similar to checking out if a woman has 'child bearing hips' or not). I loved crab with Kampot Pepper in Kep during my last whistle stop visit
Nothing but an opinionated tourist. The Pope spends more time in countries than I do ! It is also not my place to comment on a gentleman's dress. A real 23 minute wonder, that obviously knows little about ovens and cooking in Cambodia.

We always go to Srey Pov in the crab market. I dont eat crab as they are way too small to be spending all that time trying to find some meat in them. But all other dishes are always good. Cold anchor too,which is becoming increasingly rare these days. I leave the crab to my missus.
