There are a lot of places in Cambodia that have high concentrations of arsenic in the water table. It's a natural process which affects many alluvial plains, especially ones fed by rivers with sources in the Himalayas it seems. I have no idea about the rest of the world, but Bangladesh and Cambodia are among the worst affected countries, and they have that in common. I believe that some well-meaning charitable organizations went rampant here in the early-late 90s and built hundreds of wells in the boonies. Many had to be closed off and capped when they realized how much of this heavy metal was being consumed. It's closely monitored now anyway, so those stories about whatever beer being full of arsenic are just stories.

Here's a handy map of Cambodia showing the prevalence of Arsenic in groundwater. That's from wells, the water we drink from the Mekong is perfectly safe. As you can see though, much of the central area around the Mekong is highly contaminated. Kandal is the center.

wasn't it also the BBC who told people not to eat cooked cold rice which has been left out overnight as it would be inoculated by a deadly fungus? I remember something like this and I believed it until I came to Asia and saw that everyone ate cold rice in the morning from the night before .

In Perth there was a huge area of swampy peat land just north of the city that was all market gardens developed by Italians. When it was sold off for housing they dug out the peat to a depth of many metres and filled the swamp. Later many houses were built on the land but arsenic came up from the depths. Residents were warned never to eat fruit or vegetables grown there.
Kandal Province has huge amounts of arsenic and I believe many of the Khmer's stomach problems are due to the poison.

You use cold left over rice for fried rice. Because it's dried out. If you use freshly cooked rice the texture is mushy. Also as far as arsenic, it is the one and maybe most important instance where white rice is better than brown. I'm not concerned from my own point of view, but I have a 3 year old daughter, and I try to do what's best for her. I would've thought most fathers would be like-minded, which is why I posted the article. Convincing her mother to soak rice overnight, on the other hand, is just not going to happen, so personally I will try to reduce her consumption of the stuff.
