Plenty of bars here use what Youngwill uses. The chit system is very effective, never seen any argument when it comes to payment, also helps you to keep count on your tab where you just simply add up all the receipts from your cup. Hard to cheat. Each cup is labeled with a number, the cashier also has a copy of the receipt and assign that number to their computer. I take that over the hand written receipt any day, I got screwed a few times at beer garden and karaoke on this

As far as the system of chits for each drink order goes the cheating by the customer throwing away or eating or otherwise disposing of chits is easily caught as the cashier has a copy and can and should check the total that the customer/waitress comes up with against the cashier copy total. That should also catch the "putting a chit in another customers"chit pot.

As each different customer places a drinks order, a bill is written out from the bill book and the pink cashier’s copy remains in this bill book. So to check a customer’s total using the cashier’s copies would mean hunting through the bill book to find the corresponding pink bills - they won’t all be together in the book. This could take a long time. And if a customer had removed one of his bills, you wouldn’t be looking for a copy in the cashiers bill book.
When a customer wants to pay his total bill, the cashier totals up the amount from the customer copies. Hence the scope for cheating by the customer. Usually the staff are fairly good at spotting any customer’s attempts at removing bills but the odd one does slip through.

New flaw to the chit system discovered. When you’re a couple guys and buy a few beers, and buy a few lady drinks, that’s a lot of chits that add up. You can’t then keep them all, as they need to bring them to the register. But what is needed is a single receipt that you can keep to expense at the office the next morning.

If you need a receipt for reimbursement or tax purposes, just pay by credit card. I believe Young Will’s bars now accept MasterCard and Visa. Yes we get quite a few customers asking for this. We have a receipt book that we use for customers who need a copy for expenses.
