Any fluid, do a full exchange. Oil "breaks down" over time, not just use. Automatic transmission fluid, get the right type whatever it may be, I would assume ATF Type 2 or 3 would be okay but double check. I think those older early 80's Rolls used a GM 700r4? transmission which it's about as basic and easy to keep running as anything. Others...steering fluid, brake fluid, engine oil obviously, and whatever else it may have.
...replace all filters if possible, airconditioning will likely need a complete exchange of oil and refrigerant, check the drive belts for wear, cracking, etc...
...door seals, you can use lithium grease to remoisten them to a certain extent.
...tyres don't have to be the original size, just close enough (within 3-5%). Speedometer will be off slightly, but being an old English car it might be off anyway.
...also, given that Rolls are electrically complicated, I'd have the main battery leads and terminals replaced so that all the electrics have good current. You don't need Rolls Royce specific cables, just the proper gauge with quality copper.
