Those cats are quite common in Phnom Penh. I have seen two at Northbridge and one in Toul Kork. All appeared after burning off.
Are those animals endangered?
If not, what is she doing that’s wrong? Is it because she doesn’t kill the animals that people usually kill, like chickens or pigs?
Didn’t watch the videos so if she’s torturing the animals I would have missed that.

The cat might be a Leopard Cat which are on the "Least Concern" list, or a Fishing Cat which is considered vulnerable. The birds with the brown wings are Coucals, again on the "Least Concern" list, the lizard is likely a Water Monitor, not rare either. Anyway, what she's doing wrong is breaking the law, as all wild animals are state property under Article 48 of the Forestry Law of 2002. You cannot hunt, capture or trade in any wild animals. Of course the law is often flaunted, but it exists. Locals are well aware of this, they'll tell you about the lovely venison they used to get at Pich Nil Pass for example but will also mention that it's not happening anymore, or that it will cost a whole lot more now.
My issue with this video is not whether the animals she is eating are endangered or whether it's legal or not. It's that she is encouraging or attempting to popularize the trapping and consumption of wild animals. As the country develops, roads, dams, land concessions/ plantations resorts etc are built in formerly remote areas. The workers scavenge and poach their way through the landscape. I'm not really blaming them as they are often underpaid and just want to make some much-needed cash. Meanwhile there are truck-loads of Pangolins, tortoises and Slow Loris going east and to China. The wildlife is being decimated for peanuts.

Phnom Penh: The Ministry of Environment organized a press conference over the now infamous wildlife eating videos on Youtube on May 10, 2018, with the relevant authorities at the Ministry of Environment.

“Actually, all I wanted to do was earn a living from the videos. I apologise to the public. I realise now in doing what we did, we actually contributed to destroying our wild life. I had no intention of doing this.
“Besides, the animals were already dead. Also, we only earned $500 for producing the videos and even then, we have not yet been paid,” he said.
Chan Polin, Raty’s wife, said: “I don’t even know what kind of animals or birds we used or their impact on wildlife conservation.
“I bought the wildlife at Preak Phnov and we started filming our videos since December. Now I have already admitted my mistake,” she said.
Sam Arng said the ministry was conducting probes into where the wildlife was purchased. “As of now we don’t know where the sellers sourced the wildlife from. We will continue investigations,” he said.
