Jealous. Everything here has been in lockdown for 2 weeks. There are about three restaurants still open, serving Pho, Pho, and Pho. I like Pho but by the time this shit is over, I probably cannot look at another Pho again.

Rustled up roast beef, roast potatoes, Yorkshire pudding & all the trimmings. I'd post a pic, but I ate it all.

We used to cook mostly fresh food. Got enough booze for the next 10 years, food not so much.

Wanted to make some pickled green tomatoes,
Purchased the ingredients required a few weeks back and got cooking.

As there was still room in the jar I added some Daikon Radish, Bok Choy, Garlic, a few Chilies and some other green thing I cannot remember the name of.

Waited 3 weeks and today opened and sampled the outcome.

Not to bad at all, all the vegetables maintained their crisp structure - ( nothing went mushy ) perhaps I was a little bit to aggressive with the Chilies and I'll not add them to the next batch.

Tonight's meal is roast leg of pork, baked potatoes in foil, roast pumpkin and whatever green vegetables I can find in the fridge that will complement the roast pork .

I eat like a King in Siem Reap..
No lockdown or shortages.
I made a 5 cheese pizza with home made Italian sausage...home made authentic crust and sauce...my counter top over holds a restaurant size half pan.
I had country fried chicken thighs and livers with mashed potatoes, corn on the cob and cream gravy a few days ago..
I bake my own bread...my Khmer wife cooks like a pro too.
Angkor Market on National 6 is my go to market.
I worked with Mexicans for years and get the urge on occasion and I turned my Khmer friends onto Margaritas the other day.
I found dried chick peas and made Falafel and roasted red pepper Hummus the with homemade pita last week.
A grilled ribeye is on the horizon..

I grilled ribeyes from Brazil I bought at Angkor Market...Very good....with potatoes, fresh corn and bok choy...wife made pepper and lime and I had some chimichurri.
Just another great rainy day ...
