Vegetarians do not eat fish, spiders, bugs, frogs, dogs and seafood.

Vegans don't eat all animal products (flesh, eggs, milk, honey,etc).
Then you have hardcore dudes like the "raw" (no cooking, everything raw and vegan of course) http://www.thebestofrawfood.com/ and "frugivore" (only fruits and water) http://frugivoremag.com/ .

How do vegetarians survive in Cambodia? By lying to themselves. That's the easiest way to do it, and it's what most of them opt for. I've been to dinner so many times with people that claim to be vegetarian but then eat things that I know contain animal products, like dashi, or fish sauce or oyster sauce. If you buy coffee on the street odds are good that it was roasted with pork fat! But most vegetarians prefer not to know this, of course.
There are good vegetarian restaurants in town, but unless they are expressly vegetarian, they generally use meat or fish-based ingredients in their vegetable dishes.

Some will eat fish, some will eat things that come served with things giblet mentioned, some will be extreme. Veggies come in all different types.
But then quite a lot of meat eaters won't eat all meats. How many eat insects or spiders or dog meat?
You can find veggie restaurants for local customers in the provinces and some wats where the monks are vegetarian, and yes the customers/monks are mainly Chinese-Cambodian.
