If you are planning on more of a touring with carrying luggage/panniers type weekends, then you would want more of a longer, and more relaxed geometry type bike frame, rather than an aggressive type mountain bike which are designed more for standing upright.
Touring, or those old style city commuter travel to college bikes often have the bar straight at the top, or a wide frame design allowing not to much weight on the arms, or crunched over position, which is hard on the neck.
Riding position is everything on such a bike.
No need for disc brakes on such a bike. Simple is better.

If you only want to tour for a few days ( less than a week ) get an aluminium mtb ( Giant) not carbonfibre frame ( Cannondale) and fix a rack to the back end and strap a bag on to the top of it, even a bin liner will work. I started just like that, long weekends to places in Cambodia and week long trips to the Delta. However, once the bug kicks in you will want and need to upgrade!

I bought a bicycle from a vendor on the "bicycle street" near Orussey Market the day of the big Japan earthquake in 2011. It cost $35 and I rode it for about four months before giving it away. Just in-town riding. Basket on the front handlebars. Sweet.
