I guess that is something like an open top, Tagine. I use both here but has anyone tried slow smoking meat?
Nothing but an opinionated tourist. The Pope spends more time in countries than I do ! It is also not my place to comment on a gentleman's dress. A real 23 minute wonder, that obviously knows little about ovens and cooking in Cambodia.
It's a good question, I've seen them used for fish, chicken, and duck, which don't require long cooking times. Do you mean the mini barbecue sort of thing? You can get them from O'russei.
In the interest of science I did one slab in the Dutch oven (L) and one in the clay pot with hickory chips (R). Both were excellent but you can't beat smoke. Would use the Donabe again fer sure.

The chngang clay pot pots feel too thin, but easy enough to find. I've never seen the thicker style pots, but I am keen to get some stews on so will keep an eye out.

That's what I'm looking for. I have found some but they have all been glazed and don't work nearly as well. Due to gout I have to really cut back on pork n beef, but chicken n river fish are fine as are veggies, need to find other ways of cooking to liven things up. Please if anyone sees claypots around do tell me.
