Catching rats
Not having too much luck trapping rats here! Have both types of traps,neck breakers and the catch them alive jobs. However just cannot seem to get them to trap. Aussie rats go crazy over a nice dried pumpkin seed or cheese and peanut butter mixed together. Not the case here though...Did get a bit of action on some pizza crust...Does anyone have a tried and tested bait?
Don't mention the Giant Panda in the room.

The answer is cats, or one at least... Perhaps you should try prahok as bait, the rats are Khmer after all!

We've a great ratter dog at our place. (Also catches lizards and frogs)
It dumps them in front of my house and I have to bin them before they rot!
Picked one big stinky rotten one by the tail. Tail detached and it split open mid air and poored its contents of wet wriggling maggots and guts over the floor and my feet.
I can still smell it.

I use the 'glue trap type' with dried fish. Before I go to sleep I 'grill' the dried fish with a lighter to release the 'great smells'. The problem is you have to finish the rat(s) in the morning, but that's just a good knock on the head with a decent stick.

Those rat baits or Ratsack always works well if you want to use poison. The added bonus is they will die away from the house looking for water as it burns their insides, nasty shit.

They sell those red nuggets of that stuff in the hardware places by Psah Chas. You're certainly do want them dying away from your house rather than in a cavity or inaccessible gap nearby. I haven't had a problem with rats in years but they are serious grief when they are about. Too true. Google "bucket mouse trap" - without the quotes. There are many variations, but the idea is to get a mouse fall into a bucket that's partially filled with water. I've never used one but have a friend that says they work very well.
For rats I'd guess you would scale up to a bigger size trap.
