Apologies for not thanking everyone earlier, or replying, i had a message saying my first post had to be approved and assumed this was taking forever, rather than a mod moving it to q&a which i didn't know.
After a little more research, i have found out its not as easy as you would think to get a visa for a Sri Lankan national, many negative stories on facebook from immigration at airports. There isn't a Cambodian Embassy in Sri Lanka and its a hassle to use India, so i was thinking Singapore (which is easy for Sri Lankans to travel to) or Thailand.
So my complicated plan (after getting letters and accommodation) would involve booking her a return flight to Cambodia from Sri Lanka via Singapore and then apply for a Cambodian work visa (or E type) in Singapore, which apparently can take two days.
Would that plan work? Its nice to hear the comments about dont worry should be ok and easy to get a letter, but when you are in Sri Lanka it seems a million miles away.
Anyway i really want this to happen, so once again, any helpful advice or thoughts would be greatly appreciated.

Sounds like a good plan. Expensive, but good. I'm guessing that the embassy in Singapore would be better. It's difficult to predict what any Cambodian governmental office or official will do at any particular time. Maybe some complete asshole at the embassy doesn't like her face, or is so hungover that he refuses because he's too tired. Also, you should check with the airline to see if she is allowed to even start travelling from Sri Lanka without having the Cambodian visa. It might be a good idea to make sure that you can get a refund if there are any hickups, or buy good travel insurance this time.
You seem to be able to creatively come up with new possible solutions. That, and extreme patience, plus the ability to not show negative emotions, will get you far.

PS: tell her to never use the terms "work visa" or "business visa". She needs to get an "ordinary/type-E visa". This can easily be changed to a longer term, multiple entry one in Cambodia...usually.
