Don't you need pots and pans with a special base? A simple flat base pan isn't enough on its own. They need to be induction cooker compliant.
Good luck having that conversation at Orussey Market.

I could be wrong but as far as i can make out you can use any steel or cast iron pans on them as they are magnetic? So aluminium pans wont work i guess.

I noticed a decent selection of pots, pans, woks, etc at the Aeon Mall department store yesterday, 3rd floor.
I'm not a negative person, I encourage people all the time...it's usually to f**k off! But, whatever.

Mao Tee Toung has a number of kitchen equipment suppliers between Monivong and Bassac Restaurant traffic lights. Plus new catering supply shop on st 63 between 360 and 380.Same side as Thai Huot.

Hey, wos with all these non stick pans in the market and shops then? Everywhere i go its all non stick pans or aluminium woks.
Do most people cook with non stick pans here then?? Is it a French thing? Bit dodgy with the high heat needed for stir frys no?

Just take a small fridge magnet type thing with you. The stronger the magnetic connection the better the pan will work on induction, no need to ask the sales assistant any tricky question which they are unlikely to know the answer. Go to Orussey Sth-E corner they have loads of different shaped mild steel woks, think they should be ferro-magnetic. Just season them well when you get them home and they act just like non-stick.

I just moved into a new place with an induction cooker and had that exact conversation yesterday with the lady at one of the pots and pans places in Russian market. She knew exactly what would work and got me what i needed. It was a nice surprise.scobienz wrote:Good luck having that conversation at Orussey Market.
Walking around with a magnet would also work.

Saw a range of three different size flat bottom woks in the Hotel & Catering supply diagonally opposite Bassac restaurant near St 163 and MTT blv. Was told by the sales assistant they were "iron" and definitely not aluminum. Was hard to tell as they were the very light "spun metal" pans. Were around $3 - $5 for differing sizes, handles looked flimsy plastic but at that price...
