Regarding brown rice, I think that Thai monks also used to eat it, a symbol for frugality.
Regarding healthiness, I think that just swapping the fish & chips to brown rice and chicken curry goes a long way...

One of the first things I learned to cook was rice. Easiest thing ever, 1:2, bring to a boil, cover & simmer 15 minutes. Over time, I learned other enhancements; for example, you can put rice in any pot up to your first joint on your index finger, and water to the next (middle joint). Bring to a boil, then reduce to medium heat and while half covered wait till you see some holes in the top of the rice and water is almost level to top, then cover and reduce heat to lowest for 15 minutes.
You can rinse or not, will make very little difference, and, as it is cooked so well, no health implications.
You can add EVOO or butter, spices, or onions, or even substitute some of the liquids with come tomato. You can add beans and cook them at the same time, also carrots.
Brown rice is a bit trickier, but the best advice is to pre-soak it for 24 hours. Some people believe in pre fermenting it and they always keep the 3/4 of that original soaking water in the refrigerator to enhance flavor. The more you cook brown rice, the better you become with it, because it generally needs less water and more time. (or something like that)
I had a Korean living with me. He was cooking rice in the morning and I would wake up to the smell and it made me sick, it was not the thing I wanted to smell first thing in the AM. But he often burnt the bottom. So, one time I was scraping the bottom of the pot and throwing it out, and he was a bit panicked "Dont throw it away, I can make soup with that!" lol
Ok, I have to admit that a rice cooker is very convenient, I use one now, even though we rarely cook lately.

Do you use a bread maker machine? I don't think so, and yet you don't (always) burn your bread. I just like the idea of having the skills to manage things without a lot of dependance on too many appliances. I like to know that if TSHTF I can still do it all with my acquired skills.

No bread machine but I use a dough mixer. I also have an ice cream machine, pasta machine, KitchenAid, various hand-held mixers, spiralizers and dozens of other gadgets? Can I cook without them? Honestly , why not use the technology? I guess you drive a car or ride a motorbike and do not run across the Savannah in a loincloth, hunting antelope with a couple of sticks?

I get it Hanno. I have some good stuff too. Any rice cooks and comes out perfectly with the cheap 14$ ricecookers they sell in the shops around Central Market.
With brown rice just add a little bit more water than with white rice.
About Ibis Rice, they have indeed good rice, you could also go for the Semi-milled rice from that brand. it looks white but still some more vitamins left... So if you are tired of brown rice or don't like it at all.. try that one.. (Semi-Milled)
