chefs Knifes
Looking for pro chefs knifes (not Citadel) and also good quality warm/waterproof jacket.
All the Russian market gear is too small or crap quality,

Mac knives kick ass. I have about 30 different chef knives and the Mac's are the best for keeping and edge and weight and balance.

I did some chef work in Phnom Penh this year.
I wouldnt waste money on expensive knives, If there being used in a commercial kitchen they will go missing.,
Kiwi brand knives are cheap, easy to keep sharp and easy to find (Every market place).

Citadel knives are not stainless steel so they end up being much like old Wusthof knives. I am pretty sure Citadel is carbon steel so the metal will rust and or stain. Not bad but stainless are better. I concur if you are in a commercial kitchen Kiwi or there is another Thai brand of stainless is pretty good. I have a Kiwi meat cleaver that works very nice and pretty cheap. If you are buying for yourself get the best. Good knives are fun to use.

Went to the Mac knife site and those look nice. Similar to my Shun but might even be better?
