There are various systems used by bars. Some (including all of ours) use the system you describe above. It’s simple, and actually works very well.
Some bars have a longer piece of paper that they add each extra drink to manually, and then this is sent for totalling by the cashier at the end. It still involves paper going to and fro between customer and cashier.
Some bars have computer-based POS systems. One type generates a bill that is then exchanged for a revised bill when you order more drinks. This still involves bits of paper moving around the bar.
Another type just keeps a record of all the spending and then the customer gets a final bill presented to him at the end. This is the least liable system for paper going missing but it’s harder for the customer to keep an eye on his ongoing spending.
