There is absolutely fuck all , often for 80k, nothing, no shade, no petrol stations, nowhere to get food nor water and then suddenly the desert will turn green and there will be a river which will have a town by it and a place to stay and somewhere to eat, although a couple of times I have wild camped.
Once you leave the town it returns to desert and another 80k of fuck all but wind n sand. So you have to calculate how much water to carry and hope nothing goes wrong.

This is another S American myth, like the gorgeous women, good coke and great coffee. I have only seen guinea pig being grilled once and that was in the mountains of Ecuador unfortunately it was at the start of the grilling process and it was too early to eat. I thought that like the women, coke n coffee it would be everywhere and as common as rat in the Delta and dog in N Vietnam.

I found it a bunch up in the hills, near Cusco, although we preferred alpaca to it. There's even the painting in the church in Cusco from the 16th century of Jesus at The Last Supper (why is it "supper" and not "dinner"?) and on the table is a grilled guinea pig. Luckily you should be able to readily find cebiche (if you end up back in Lima I highly recommend La Mar Cebichería by Gaston Acurio - it's a little pricier, but the food and drinks are both incredible).
Women are hit and miss. Not as many beautiful ones in Colombia as you would expect, and those that are have almost certainly had a nose job. You really can tell the difference between the wealthier, skinnier, whiter and attractive wealthy women vs the poorer, darker, short and fat indigenous ones. Peru does not have many on the attractive side...
Coke is there if you want it, but you might not see it if you're not looking for it. I find it much more ubiquitous in Mexico actually. In Peru it's all about the cocoa leaves and tea which it's hard to avoid in the hills.
Coffee is another hit and miss. Great coffee is there of course, but not at every small place you'll stumble into - disappointing indeed!
