There are so many now and they seem to come and go with quality.
Doesn't have to be top level sashimi etc. but where do y'all recommend even for a nice lunchtime bento box?
I've enjoyed Ninja. Cheap and cheerful.

Kaizoku Sakaba does fantastic set menu/free flow evenings, reservation only, a few times a month
Adachi for lunch sets; a little more expensive than your sushi bar or whatever but the quality shows
If you want to splurge, omekase at sushi lab or kaiseki at Nigiri lab.
For fun and fusion, katanashi near patio hotel

Budget/value-wise I'm struggling to get past Sushi Chef at the moment - but only the Toul Tompoung or Toul Kork outlets, for some reason the BKK efforts are both utterly pants from customer service and food portion sizes.
Top end I think there are many more options than I could shake a stick at; the very south end of st.63 (the last stretch before you drive into a wall) has a lot of restaurants from small right up to the Grand Yamato at the end of the road.
Spotted a couple of new ones up in Toul Kork also on st.337 that look very nice, but not had a chance to sample sorry.

Shangri-la next to Pencil on Sisowath does a good lunch set, as does Hokkaido opposite 3 Mangoes on 360.

Morticia and I tried the sushi off the vendor next to Garage Bar on St. 110 a couple of times. Not bad for street sushi (insert rude comment here). A 3 dollar plate was similar quality to a 20 dollar sushi special at Sushi Bar. Shocked by that actually.

Are you just after Sushi or Japanese in general? Lots of great places in little Tokyo (less focus on Sushi) many open after 5pm though, the bottom end of 63 past MTT. Hakatashokudo NHAM is a great place with a good Sake selection.

Not necessarily sushi/sashimi.
A good lunch bento would do a few times a week.
I went to some place the other day and the set menu was 99 per person which is a bit much regularly.
